Sesame Noodles


1 lb pasta of your choice – brown rice spirals works good  
1 medium cucumber peeled and sliced

Sauce, dry ingredients:

8 tbsp roasted sesame seeds
3 tsp sugar
1/4 tsp cayenne pepper
1 tsp salt
1/4 tsp white pepper

Sauce, wet ingredients:

4 tbsp tamari or soy sauce
4 tsp Chinese black vinegar
2 tbsp vegetable oil
2 tbsp dark sesame oil
2 tbsp vegetable stock or water

Dry roast the sesame seeds until brown. Once cooled, grind in food processor until fine. Combine the rest of the dry ingredients and mix well.

Add wet ingredients and mix until you have a smooth paste. 
Cook pasta and drain well. Toss lightly with additional sesame oil.
Pour sesame mixture over cooked pasta a little at a time to distribute evenly. Garnish with cucumber.
Can be served hot or cold.

Garnish with:

Spring/Summer - sliced cucumber
Fall/Winter Steamed kale or green beans
