Sri Lanka Parsley Salad

Ingredients

2 large bunches fresh organic parsley
1 cup dried unsweetened coconut
4-5 limes
salt to taste
½ to ¾ cup diced red onion

Wash parsley and let dry. Chop very fine and combine with ½ cup red onion.
Steam coconut until plump. Add to parsley. Add salt and lime juice until flavors are balanced to your taste. Add more coconut and onion if needed.
